The German-born chef Silvio Nickol is the soul of the restaurant that bears his name. The famous establishment is located inside the luxurious Palais Coburg Hotel in downtown Vienna. Nickol has a bright outlook when it comes to his career: “Passion, work and luck are the three cornerstones of my profession,” he says. He acknowledges these three premises because his path to becoming an acclaimed chef has been marked by incessant work carried out with passion. He has also been fortunate to learn from great cuisine masters such as Lothar Eiermann and Heinz Winkler, among others. Since 2011, Nickol runs the kitchen of this gourmet restaurant that proudly boasts two Michelin stars. The restaurant’s interior shows a refined elegance. An amethyst wall at the entrance offers a glamorous welcome, and the unusual decorative style of the dining room—a take on 1960s futurism— makes it the ideal place to enjoy an excellent meal. The iconoclastic chef also has a keen eye for what really matters: the essence of taste. Born to a Greek father and Austrian mother, Alexander reveals his multicultural background in his cuisine. He creates a brilliant–personal and subjective—fusion cuisine with glorious presentations that remind us of paintings by Kandinsky or Miró, among other artists.
